When I send an email and start entering an email address into the "from" field, when I enter a particular email address that is similar to one that I used to but not longer use, it populates automatically  with an email address that I no longer use. I want to delete any memory of this email address so I don't need to remember to not allow the autofilled address to stay

The first step to ensure old addresses are not autofilled is to remove those old addresses from your audience.

You can search for those email addresses from the search field on your audience tab, and then delete them by clicking the check box to the left of the contact's name and selecting "delete" from the top tool bar.

If you are still noticing that older emails are autofilling after you have removed them from your account, the next step would be to clear cookies and cache from your browser. If you're unsure how to clear your cache, you can search for instructions for your particular browser. Once you have cleared cache and cookies, you need to close out of your browser, restart your computer, and reopen your Emma account. Once these two steps are completed, those autofilled addresses should no longer be a problem.

I hope this information helps!
