How do I edit a field in a signup form?

I'd like to remove one of the choices for a field in our signup form but I don't see how. The only option I have is to hide the entire field.

What you're actually looking to do there is to edit the "Contact Field".  You can make those changes by heading to the "Manage Contact Fields" section in Audience.

Why is there a padlock next to Field type when I try to edit contact field?

Once a field is created, you cannot change the field type.  It is hard-coded into our system, and could cause issues if changed, so they're locked in.  

If you created a field and find that you need it to be a different type, you'll need to just create a new field with that type.
