Phone number hyperlinking in footer

I have a phone number in the footer of an html email I'm creating. It is white, plain text in the editor and previews, but as soon as I send a test email it shows up as a hyperlink. What can I do to prevent this from happening?

Hi Casey!

Certain email clients are programmed to automatically hyperlink a phone number, even if it is not linked when you send it out in Emma.  The workaround here is to link the phone number to something on the front end before you send out the test, change the color of the text, and turn off the underline.  The email client won’t be able to hyperlink it once you do these steps.

I'd actually like it if we could get just the opposite result. I'd like to be able to include clicks on the phone number in my email as clicks within the Response Stats.
